Eat The Rainbow… pants.
Quick Rainbow Carrot harvest before the snow hit turned into sweet apple cider vinegar Rainbow pickles! I can only conclude that organic family-gardening is close to perfection when you get to harvest ‘Mr Carrot-Pants’ out of the ground. This is one of my favorite harvests every year and last year these leggy vegetables went into Lil’ NYC’s school lunchbox and brought laughter and conversation to the lunch table. Biodiversity is beautiful in all its forms and also the essential pillar of organic gardening and life. Organic shapes for the win!
